I love chicken wings. There, I said it. They're so good no matter how they're made. I've had grilled wings, baked wings (duh!) & obviously fried too. Why do I love them so much, you ask? Because there are so many different ways you can have them with all the flavor options and they're a good one to remix into a healthier (& candida friendly) option.

Also, when I'm having chicken wings it's always associated with a good time. Whether it's hanging out on a patio during the summer, watching a basketball game or at a family cookout. Very few times do you have wings on a no good, awful & terrible day. It just can't happen because wings make things so much better.

These wings are my dinner tonight and I'm so looking forward to them. I have no fancy plans or a cookout to attend. It's just me & The Keepers on Netflix. By the way, have you watched this documentary yet? I'm always fascinated by murder mysteries and I can already tell it's going to be a good one. Thankfully I have a no-fuss dinner that won't need much attention so my eyes & ears can uncover this mystery from 1964.

Smoked Chili & Garlic Baked Wings

Ingredients:

  • 1/2c. olive oil
  • 2-3tsp each of seasonings: chili powder, garlic powder, onion powder, salt, pepper & cajun seasoning
  • 2lbs bag of chicken wings

Instructions:

4 hours before (24 hours if possible)

  • Rinse & dry chicken wings
  • While drying, mix olive oil & seasonings together in a bowl
  • Once mixed, place the wings in a large sealable bag with seasoning mixture
  • Seal bag & toss chicken around until fully coated
  • Let sit & marinate for a minimum of 4 hours but, longer if possible

Day of

  • Preheat oven to 400 degrees
  • Place a baking rack on top of baking sheet (if you don't have a baking rack, just place on a greased baking sheet)
  • Put chicken on rack (or sheet) skin side up (keep remaining seasoning mixture)
  • Bake in oven for 35-40 minutes, flipping halfway through and adding the remainder of seasoning mixture from bag
  • Serve immediately or store in sealed container for 2-3 days
